FACTORS AFFECTING THE CONSUMPTION OF STREET FOOD: AN APPLICATION IN ESKISEHIR

Abstract

Today, street food culture is diverse and rich in the world. An intensive literature search was conducted to reveal the originality of the research. Despite the widespread consumption of street food in Turkey, it has been observed that there are very few studies on street food and street food consumption in the relevant literature. The aim of this study is to investigate the factors affecting the consumption of street foods in Eskişehir. The research was applied on consumers consuming street food in Eskişehir. For this purpose, the application was carried out in a central region where the consumption of street foods is intense. Street food consumers participating in the research consist of different age and occupational groups. Within the scope of the study, the data collection process was carried out through face-to-face interviews. Within the scope of the research, semi-structured interview technique was used as a data collection tool. For this purpose, the data obtained from 12 participants consuming street delicacies in Eskişehir were examined and various findings were reached. In the consumption of street flavors investigated within the scope of the study, it shows that socio-demographic factors are an important variable in consumers' preferences for street flavors. It has been found that age, education status and gender variables cause significant differences in the preference of street food.
